Christabel first made this yummy pizza in cookery club at school. Follow her method and try it for yourself. Method: I fried a chopped onion and 2 garlic cloves for about 5 minutes, then added a tin of peeled tomatoes but drained off most of the juice, and a big dollop of tomato puree. I had already chopped up some fresh basil and oregano so added this to the frying pan and cooked until the mixture was bubbling. I then let the mixture simmer for 10 minutes until most of the liquid had gone, and then left it to cool. I cut a loaf of ciabatta bread in half lengthways and spread the tomato and herb mixture on top. I thinly sliced a block of mozzarella into rectangles and placed these on top of the herby tomato sauce. I mixed a spoon of olive oil with salt, pepper and more chopped fresh basil and parsley and spread it over the mozzarella, then sprinkled over 2 tablespoons of parmesan cheese. The pizza was baked in the oven until the cheese started bubbling.
