This is Alice's Lentil and Thyme soup using fresh thyme and bay leaves. It was originally her grandmother's recipe which was passed on to her mum and now she makes it too! Ingredients for two servings: 40g Red Lentils 500ml chicken or vegetable stock Knob of butter Olive oil 2 shallots 2 cloves of garlic Fresh thyme 2 Bay leaves 4 slices of pancetta 50ml single or double cream Salt and pepper to season Enjoy!
