Why not try making 12 year old Lara's Crispy Herbed Potato Wedges. You will need: 3 large baking potatoes basil rosemary coriander salt black pepper corns 3 tablespoons of vegetable oil The equipment you will need is: a large mixing bowl a large baking tray pestle and mortar chopping board sharp knife scissors medium sized bowl Method: Set your oven to 230C, non fan assisted. Firstly cut your each of your potatoes into 6 to 8 wedges. You can do this by cutting the potato in half, then cutting those bits in half, then cutting those bits in half again. Secondly put the potato wedges into a large mixing bowl and cover them in the oil. Make sure every bit of them is coated. Place them onto the baking tray then bake for 30 to 40 minutes. While they are cooking you can make the herb crust. Take a few sprigs of each herb and cut them up finely. Then put the chopped herbs into the medium sized bowl. Add a pinch of salt and grind a tablespoon of pepper corns in a pestle and mortar. Add the ground pepper corns to the herb and salt mixture. When the wedges are pale gold take them out and sprinkle on the herb crust. Put them back in the oven and bake for a further 10 to 15 minutes or until crispy and golden brown
