This recipe is one of my ambitions, to create a Vegan Thai salad. Thai salad from the usual Thai food recipes tend to season the dish with fish sauce or “Pla-ra” (fermenting fish with rice bran or roasted rice powder and salt) in order to achieve complex flavour. I would like this dish to be a truly vegan, healthy ,fresh yet substantial. My inspiration came from a Peruvian street food stall that I visited last month. It was absolutely delicious and I decided to adopt some of their ideas and add Thai food cuisine twist.
