So, what should one look for as a wine lover wine enthusiast? Look at the geography and the grape varieties. It is easy to fly to Oporto (Porto), there are great hotels, and excellent restaurants, the Vinho Verde region with the alvarinhos. Top alvarinho wines are great. Then you can travel not far and you come to port wine county and also Douro table wines. There are Atlantic wines and inland wines, very, very different in style. You can experience the differences travelling only short distances.

Cortes de Cima is one of the leading wine estates in the Alentejo, a wine region an hour or two east of Lisbon that has undergone a revival in the last few decades.

Hans Kristian and his wife have a background in the plantation industry in Malaysia. They had a dream to start a vineyard. It could have been in Australia, in California or elsewhere. They happened to come to Portugal to visit friends with a sail boat and discovered the country. They liked the climate and the people. Probably the friendliest people in Europe, says Hans Kristian. That was in 1986. After two years they found the Cortes de Cima estate. The total area is 450 hectares of which 150 ha are planted with vines. There were originally only 5 ha of vines so virtually all is planted by the Jorgensens.

Truffles are a type of mushroom. About a dozen truffle varieties are used in Europe. There is the white truffle, called in Latin Tuber Magnatum Pico. It is found mainly in the Piedmont in Italy, but also in Istria in Croatia and Slovenia. It can also be found in the Siena province and in Umbria.

The best season for the white truffles is from the beginning of November until the first snow falls, so until early to late January, depending on the weather.

There is also the black truffle. There are several variants of black truffles: macrosporum, mesentericum, and of course the most famous and exclusive one, the Tuber Melanosporum â or black Perigord truffle.

Dottore Colli, being Italian, tells us that the white truffle is more powerful than the black truffle but the French would no doubt not agree on that.

Domaine Duseigneur is a small family wine producer in the southern Rhone Valley just across the river from Chateauneuf-du-Pape, run by the brothers Frederic and Bernard (they also work with the famous French sommelier Philippe Faure-Brac).

Frederic sees himself more as a farmer than a winemaker. The most important thing is what happens in the vineyard, that you have life in the vineyard, healthy vines. There is a big difference between traditional farming and organic farming. Biodynamic farming is one more step, as done at Domaine Duseigneur since many years. 

In biodynamics they use two preparations: 500 which is specially prepared cow manure, diluted in water and sprayed in the vineyards in the autumn; 501, a finely ground powder of quartz. It is also sprayed, but in the spring. This helps the flowering of the vines.

We talk with Denis Dubourdieu about the trend towards organic wine, organic farming in the vineyards. Denis emphasises that one should not only talk about organic (biological) viticulture! And organic farming has to evolve. For example, it is still allowed to use much copper, copper sulphate, in the soil, and it is not at all organic. It is a metal, mineral, that stays in the soil. Such things have to change. It is also important to use less chemical poisons, for example by using so called sexual confusion in the vineyards to fight the grape worm (vers de la grappe). The sexual confusion with pheromones in capsules makes it possible to dispense with much poison.

So, how do they do the winemaking at Quinta do Crasto? They follow a very practical philosophy of making wines: Very high quality grapes from the vineyards to make high quality wines. They make both a fortified port wine and a range of table wines, red and white. At Quinta do Crasto they also believe in using local traditional Portuguese grape varieties.

For the vinification and the work in the winery they donât follow any specific recipe for how to do thing, they see how each vintage is and adapt to the climate and the grapes. The winemaking is about common sense, as Manuel says. Above all they like to respect the fruit in the wine.

Why did Quinta do Crasto start production table wines? Tomas explains the reasons. They wanted to show the world what is the potential of Douro, so they started to make table wines.

Weâre sitting at the brand new winery in the Tedo river valley, overlooking the terraced vineyards along the river and the Douro region impressively steep slopes. We are talking about the red wines and about the future of the Douro wines.

Niepoortâs four main red wines are Vertente Tinto, Batuta, Redoma and Charme. They also make a new-old red wine called Robustus that is made in an old-fashioned style aged longer in wooden barrel. 

Luis Seabra is clearly someone who likes to experiment with different wines, different grapes and different vineyards. There is plenty to material to choose from: there are 40,000 hectares of vineyards, 100 different grape varieties for the reds and 80 different grape varieties for the whites.

In part 2 Piero explains what it means to be a biodynamic winery.

Piero explains how he farms his vineyard with biodynamic principles, how he works with preparations and how he started with organic viticulture and then moved further to biodynamism.

Biodynamic farming is focused on the ground, the soil. They use for example the 500 treatment, which is based on cow manure prepared and matured under ground in cow horns. It is used to prepare treatments to spray on the vineyards. Before spraying the preparations have to be &#039;dynamised&#039; in a &#039;dynamiser&#039;. The biodynamic treatments increase the energy and the humus in the ground. It helps the vineyard to survive in extreme climate and weather conditions. Poggerino is a winery located in Radda in Chianti in Italy, at the heart of the Tuscan wine region. Itâs a small vineyard and winery, 43 hectares with 11 hectares of vineyards with mainly sangiovese. 

They make a rose wine, primary purpose it to increase the quality of the red wine. The base red is called Il Labirinto made from sangiovese from young vines. Then they make a Chianti Classico Poggerino, aged for 12 months in French oak barrels â a classic Tuscan wine with original character. Next is a Chianti Classico Riserva Bugialla, which is the name of a small vineyard plot with old wines. He owns the winery together with Josephin Cramer. Jarkko comes originally from Finland and Josephin from Germany. They have been running the Candialle vineyard since the early 2000s.

The vineyard is located in Tuscany in the heart of the Chianti Classico region, near the Panzano village. The vineyard covers six hectares of vines, primarily sangiovese, but also some merlot, syrah and petit verdot. Jarkko makes three wines: one wine based on Merlot called Ciclope, Cyclops, the one-eyed. It is a blend including some sangiovese and syrah. A very fresh fruity, easy drinking wine. They also have one IGT wine called Pli, which is their top quality cru wine, and a Chianti Classico Candialle.

When young the wine is very much on the fruit and exotic aromas. With age it evolves more to dried fruit and marmalade. Even older it turns towards coffee, caramel, toast, roasted aromas... Enjoy!

They also make sparkling wine on chenin blanc, cabernet franc, and a bit of chardonnay.

It is located in Vacqueyras, in the southern Rhone Valley in France, and produces mainly red and some white wine. It covers 17 hectares of vineyard on the garrigue plateau between Vacqueyras and Courthezon with soils that are mainly clay and limestone with an addition of the galets roules, big stones, typical for the region (famous above all in Chateauneuf-du-Pape). The vines are on average quite old, 50-60 yrs  Serge Ferigoule make essentially two different red wines: The cuvee classique, named after his daughters Doucinelle (Doucinelio), Florette, Azalais, depending on the year; and an old vine cuvee (vieille vignes) Cuvee Lopy. Daniel Brunier talks about the differences between the grenache in Chateauneuf and the grenache in Gigondas, a wine region not far away &amp;ndash; how the climate, exposition and soil make a difference. We taste the 2005 vintage which is a very big and rich vintage. The wine is a blend of grenache, mourvedre, syrah, cinsaut and clairette.

The make a range of wines: Chateauneuf du Pape, Gigondas, a special cuvee called La Roquette to name some.

We also make a quick visit to the winery where pumping over is ongoing (remontage) to aerate the must and improve extraction during fermentation. (And one of the tanks is thoroughly cleaned inside.)

We&amp;rsquo;re visiting just when the harvest is in ongoing, so there&amp;rsquo;s plenty of work (and noise) in the cellar. They have just brought in all the grapes from the vineyards. This is the vintage of 2007 which was very successful in Chateauneuf since it was not subject to the damaging rain that they had in other regions of France.

The Dom. du Grand Tinel is a family property since several generations. They also have a winery called Clos Saint Paul with 14 hectares. They have some 75 ha at Grand Tinel, some 60 ha in Chateauneuf and the rest in Cotes du Rhone. The vineyards are planted primarily with grenache, syrah, counoise and muscardin (very unusual) and some cinsault. Olivier is making his first vintage in Chateauneuf and has previously worked in Mendoza in Argentina.

He originally comes from the Layon region in the Loire Valley but settled in Roussillon to make wine.

He came to the Calce village to taste the wines of Gerard Gauby, one of the leaders in new French winemaking. He tasted, and then he stayed.

Olivier tries to make very personal wines - with a lot of freshness, acidity, and elegance.

He makes white wines using the traditional grape varieties macabeu, grenache blanc and grenache gris. His reds are made with grenache noir, carignan, and a bit of syrah and mourvedre. In this village one can still find vines planted just after the Phylloxera, about one hundred years old!

The Domaine Piquemal winery is located in Espira de l Agly, in the Agly valley, in Roussillon in the south of France.

It is a family vineyard that is today run by the brother-sister team Marie-Pierre and Franck Piquemal.

We&amp;rsquo;re tasting different wines in their tasting room: Cuvee Justin Piquemal with the appellation Cote de Roussillon. It is a blend of cabernet sauvignon, grenache and mourvedre. It is unoaked and made in a fresh and fruity style. Then we taste a more traditional southern French wine, Cuvee des Terres Grillees, coming from a patch of soil that is very dark, almost black, which is the reason behind the name (that means burned soil). This wine is a bit more complex and is a Cote de Roussillon Villages appellation. 

We also make a short excursion out into the vineyard to look at the Burned Soil, a vineyard that makes for very early ripening grapes.
