http://www.bkwine.com/wine_tours/wine_tours.htm --- Interview with Sandrine Garbay the chief winemaker and cellar master (maitre de chai). She has been in charge of the wine making since 1998 at Yquem. Sandrine has made a dream come true by becoming the winemaker of Yquem.
The most important thing for Sandrine in making the wine is to respect the source and the raw material, so to speak, to respect the grapes and extract all aromas and elegance that the grapes and the noble rot (botrytis cinerea) can give.
Chateau d'Yquem is located in Sauternes in Bordeaux and is one of the worldâs most expensive sweet white wines, in fact, it's simply one of the world's most exclusive wines all categories. Yquem is the biggest property in Sauternes having some 100 hectares. The size adds complexity and depth to the wine.
Sandrine also talks about how to pair Yquem wine with food â matching it with for example lobster and shellfish or even fish. Also chicken or veal can be delicious with Yquem.
